Debt Collector 'Unaged' Moonshine is a bold, unaged American-style new make spirit, crafted in London from a unique mash of corn, barley, and rye.
Debt Collector Moonshine delivers a thrilling ride of flavours, offering a vibrant 'corny' character with an unexpected twist. Its flavour profile is a cross between pisco, grappa, and white agricole rum, making it a perfect base for white rum cocktails and an expressive, light, and clean spirit.
Fun fact: This unaged moonshine is the only commercially available one of its kind in the UK, bringing a truly distinctive spirit to the market.

London's first American style whisky
Debt Collector Moonshine (Unaged) is made from a mash of majority corn plus barley and rye. It is fermented using a Kentucky Bourbon yeast, copper pot distilled twice and then matured in charred, virgin American oak before diluting to 50% ABV for bottling.
Emulating the same raw materials, processes and equipment utilised to make an American style whisky or "Bourbon".
While the brand is modelled on a Bourbon, as it is made outside of the USA it therefore is not strictly a Bourbon. Instead, this initial expression is called a “Moonshine” taking
inspiration from the origins and evolution of the category.
In the UK also a spirit cannot be called a whisky unless it has been in an oak barrel for at least 3 years.
We plan to release a new vintage each year of this brand so the customer can come along the journey with us enjoying and understanding the maturation process.
Musical inspiration and label art
“Blues Rock” is the musical inspiration behind Debt Collector, capturing the essence of the Deep South of the USA where Bourbon originated.
In true Doghouse fashion the label turn heads. A fictitious skeleton gangster character, "Mad Dog Coll” reflects a nod to the cash heavy Prohibition times that inspired the brand, where illicit alcohol - aka “moonshine” - was born and bootlegging was rife.
The art genre chosen for this label was airbrush which originated in the 60s and 70s and became famous on panels of hot cars and Harley Davidson or other motorcycles. The artist that brought the label to life was Stefan Koppel who is a German based Airbrush artist ().
As we release successive vintages of the spirit, we will release new labels in a different colour format but maintain the same basic design.
